Bold Expression of New England Rye
When we set out to craft our first batch of Straight Rye Whiskey, we aimed to bring out the rich spicy flavors of rye from New England. To do this properly, we understood patience was key. This started with our slow mashing process, then long fermentation, and finally a double pot distillation to maximize the characteristics provided by the rye and other New England grains supporting the final spirit. We then let our spirit rest in air seasoned, 53-gallon American oak casks for over 2 years. Each barrel aged through the rounds of New England seasons to extract and infuse the warmth and crispness of our characteristic climate creating depths of flavor over time.
We are left with a final spirit that is both spicy and smooth, with notes of dark dried fruit, fragrant sandalwood, cinnamon, and vanilla. A patient, made-from-scratch process that provides a bold representation of New England Rye Whiskey.
