Find and Source the Best Quality Ingredients

Chattermark was founded as a “grain to glass” back to basics whiskey distillery. We fostered relationships with local New England farmers to source premium grain and produce everything on site – turning bushels of fresh grain into superb spirits – as only a true grain to glass distiller could do. We do not source any neutral grain spirit and pass it off as our own. We find and source the best quality ingredients, then patiently mash, ferment and distill using classic techniques in the finest equipment. We then allow each spirit to gently age in the highest quality air seasoned barrels, embodying process into product as boldness and clarity pair with elegance and strength.

Patience is a virtue. We take our time, one small batch at a time.

Slow mashing and long fermentation techniques maximize the grain flavor providing complex fragrance to the final spirit. Longer ferments are inoculated with wild yeast, allowing a secondary fermentation that creates incredible aromas. Our double pot distillation makes for a well-balanced, multi-layered final spirit. The copper whiskey helmet creates an ideal amount of vapor reflux allowing our distillations to be both bold and flavorful without stripping away character. We then recycle the spent grain waste for use in renewable green energy. After gently resting the spirit, our slow proofing and general tenderness throughout production, keeps subtle, complex flavors and aromas intact.

Along the way we discovered, that when properly put in the hands of our head distiller, our hybrid Kothe still creates intricate spirit profiles through increased copper contact.  Our Pot & Column White Rye and the base for our Coastal Forest Gin are testaments to this closely-held process.    

Once distilled, we only use hand selected barrels coopered with natural air seasoned staves that gently cultivate our whiskies. Each barrel stave is air dried beyond industry norms. This allows our American oak barrels to retain the wood’s natural aromatic compounds that are often lost in a kiln dried process. As a result, the astringent and bitter profiles of a kiln dried process never touch our spirit. The congener profiles developed in the delicate fermentation and distillation process are further enhanced by this air seasoned character, leading to a deliciously clean and complex spirit without any additives, preservatives or chill filtering.
